Lipase, also called triacyl-glycerol acyl hydrolase, which hydrolyzes grease to produce fatty acids, glycerol and monoglyceride or diglyceride. The lipase only needs mild reaction condition, and has excellent stereoselectivity and no environmental pollution. Lipase has been widely used in many industrial fields, such as food, grease, washing, leather processing, paper making, and feed industry.

Definition of the unit of the enzyme activity: One unit (U/g) is defined as 1 g of enzyme powder to hydrolyze fat to release 1 μmol of fatty acid (titrated with 0.05 M NaOH standard solution) in phosphoric acid buffer (0.025 M, pH 7.5) at 40°C in 1 min (total reaction time is 15 min) (QB/T1803-1993).
Applications:
1. In baking food production, adding lipase can strengthen the bread gluten and improve bread quality.
2. In grease processing, adding lipase can promote ester hydrolysis and exchange and esterification.
3. In detergent processing, adding proper amount of alkaline lipase combined with alkaline protease can not only strengthen the detergency, but also facilitate the maintenance of washing fabric.
4. In leather degreasing, the specificity of the alkaline lipase ensures the quality of degreased leather and enhances its grade. The use of the enzyme also solves the problem of environmental pollution.
5. In papermaking industry, adding lipase can overcome the obstacle of the resins of pinus massoniana pulp,facilitate the ink removal of waste paper pulp, cleaning of papermaking net and the treatment of papermaking wastewater.
6. In feed industry, adding lipase can complement insufficient endogenous lipase, promote the release of fatty acids, enhance the energy utilization of grease raw materials, improve the taste and flavor of feeds, and promote the recovery of local inflammation. The amount of supplementation in compound feeds is 100-200 g/ton (based on 10,000 U/g).

Storage:
Store in dry and cool (below 25°C) area with ventilation. During transportation, avoid direct exposure to strong sunlight, rain and moisture. The enzymes will lose activity at high temperature or under strong sunlight. The enzyme activity can be maintained up to 90% for 6 months when stored at room temperature.
