As a new type of enzyme preparation, the fungal α-amylase has been widely used in the production of starch syrup, oligosaccharides, beer, flour, bread, steamed bread and other foods. It also has been used in animal husbandry and aquaculture.

Definition of the unit of the enzyme activity: One unit (U/g or U/ml) is defined as 1 g (solid powder) or 1 ml (liquid) of enzyme to produce reducing sugars equivalent to 10 mg of glucose in a catalytic reaction (pH 5.0 at 40°C in 30 min).


1. In bread baking, the adding the fungal α-amylase in the flour can promote fermentation, reduce the viscosity of dough, increase the sugar content of dough, improve the taste, outer color, and baking quality of bread, and extend the shelf time of the bakery foods.

2. In alcohol production and brewing industry, adding the fungal α-amylase can make the enzymes in the fermentation evenly distributed, increase the saccharification, yeast growth and the yield of alcohol.

3. In feed industry, adding the fungal α-amylase combined with semicellulase can increase the digestion of cereals and utilization of feeds and reduce the production cost. The amount of supplementation are as follows:


(1) For soybean meal based diets of laying chickens, ducks and geese: 80-100 g/ton.


(2) For soybean meal based diets of broilers and chicklings: 100-150 g/ton.


(3) For soybean meal based diets of piglets and aquatic animals: 150-200 g/ton.


(4) For miscellaneous meal based diets of laying chickens, ducks and geese: 100-120 g/ton.


(5) For miscellaneous meal based diets of broilers and chicklings: 120-150 g/ton.


(6) For miscellaneous meal based diets of piglets and aquatic animals: 150-200 g/ton.
