The neutral protease is prepared by deep liquid fermentation of Bacillus subtilis. As an endoprotease, neutral protease can be used for various proteolysis. It can hydrolyze protein macromolecules into peptones, peptides and amino acids. It has been widely used in food processing, medicine, textile industry, leather processing and feed industry.

Definition of the unit of the enzyme activity: One unit (U/g) is defined as the amount of enzyme needed to hydrolyze casein to produce 1 μg of tyrosine measured as the absorbance value in furin reagent chromogenic reaction in sodium phosphate buffer (0.05 mol/L, pH 7.5) at 40°C in 1 min (reaction time is 10 min) (QB/T1803-1993).

Applications:

1. In food processing, the neutral protease can hydrolyze proteins of dough into peptones, peptides and amino acids. It can reduce dough strength, improve its plasticity and extensibility, and keep its printing pattern clear and beautiful.

2. In pharmaceutical industry, adding neutral protease in drugs can improve the anti-inflammatory, choleretic, analgesic, and digestant effects.

3. In textile industry, the neutral protease can be used for treating wool to improve its tensile strength and handfeel, and minimize its shrinkage. It can also be used for silk degumming and silk refining.

4. In leather processing, the neutral protease can be used for removing hair in tanning and makes the leather clean and glossy. 

5. In feed industry, addition of neutral protease, amylase, cellulase, and semicellulase can enhance the utilization of protein and reduce the feed cost. The amount of addition of neutral protease is as follows (based on the activity of 10,000 U/g):

(1) For soybean meal based diets of laying chickens, broilers, chicklings, ducks, geese, and ruminants: 100-120 g/ton.

(2) For miscellaneous meal based diets of laying chickens, broilers, chicklings, ducks, geese, and ruminants: 120-150 g/ton.

(3) For soybean meal based diets of piglets: 120-150 g/ton.

(4) For miscellaneous meal based diets of piglets: 150-180 g/ton.

(5) For soybean meal and miscellaneous meal based diets of aquatic animals: 200-500 g/ton.

Storage:

Store in dry and cool (below 25°C) area with ventilation. During transportation, avoid direct exposure to strong sunlight, rain and moisture. The enzymes will lose activity at high temperature or under strong sunlight. The enzyme activity can be maintained at least 85% when stored for 6 months. It is corrosive to skin and direct contacting with skin and eyes should be avoided.
